The vest is the difference between wearing a suit and having thought about it. A three-piece does something a two-piece cannot: it holds the whole outfit together as a single line from collar to shoe, and it keeps doing so after the jacket comes off.
That last part is why grooms buy three-piece suits. A wedding runs twelve hours. At some point in the afternoon the jacket comes off, and a man in shirtsleeves looks like a man who has given up, while a man in a vest looks like a man who planned ahead. The photographs from that half of the day are usually the good ones.

Wearing a vest correctly
Two rules, both non-negotiable. Leave the bottom button of the vest undone. And never let the vest ride short. If you can see shirt fabric between the vest hem and your belt when you stand straight, the vest is sitting too high or is too short for your torso.
Your tie sits behind the vest, not over it. A pocket square is optional and always works. Keep the jacket buttoned when standing and the vest buttoned throughout, apart from that bottom button.
When to choose three-piece
Formal and semi-formal weddings, as a groom or groomsman. Evening receptions. Winter, where the extra layer is genuinely warmer. Any occasion where the dress code says formal without saying black tie.
For daily office wear, a two-piece is usually the better investment. The vest adds formality you will not need on a Tuesday.
